Fleurs de courgettes farcies au tourteau et gambas , jus réduit de leurs carapaces

L’été se termine doucement mais nous trouvons encore dans notre potager des légumes du soleil avec notamment les courgettes.
Aujourd’hui c’est sa fleur qui m’intéresse et elle va illuminer mon assiette de sa couleur jaune éclatant .
Je vais la farcir avec un mélange de crabe et gambas , la cuire à la vapeur afin de préserver sa fine texture et je l’entourerai d’un jus réduit confectionné avec les carapaces et têtes de gambas .
Voilà une magnifique entrée estivale à accompagner avec un vin blanc ou rosé conseillé par Jenny , notre sommelière et négociante en vins ( coordonnées en fin de recette )

1 ) Les ingrédients pour les fleurs farcies ( pour 4 personnes )

4 (belles) fleurs de courgettes
100 g de tourteau (crabe) frais ou surgelé
320 g de gambas crues(avec leur carapace) reste 160 g décortiqué
jus d’1/2 citron jaune
zestes d’1/2 citron vert
1 pincée de combawa râpé (attention au dosage , sinon trop puissant)
10 g de gingembre frais râpé
1 échalote
1 gousse d’ail
20 g de bonne crème fraîche épaisse
huile d’olive ( 2 c à soupe)
sel , poivre, poudre de piment d’Espelette
fleurs comestibles (pour le dressage)

Préparation de la farce

Dans un saladier , mettre les 100 g de tourteau (crabe) coupé finement (si surgelé : bien l’essorer)

ajouter : le jus du 1/2 citron jaune ,les zestes du1/2 citron vert, les zestes de combawa , et 10g de gingembre râpé .
ainsi que la crème et l’huile d’olive ( 2 c à soupe)
décortiquer les gambas ( en réservant les têtes et les carapaces)
les déposer dans une poêle chaude avec de l’huile d’olive et y ajouter ail et échalote finement coupés


après une cuisson rapide , les hacher au couteau et les verser dans le saladier qui contient le tourteau (crabe).
saler , poivrer et mélanger le tout .
mettre dans une poche à douille.

2 ) les ingrédients pour le jus réduit de carapaces

les carapaces et têtes de gambas
250 g de crème liquide à 30 % mg
1 échalote
3 gousses d’ail
1c à café de fumet de poisson (en poudre)
1/2 c à café de pate de curry rouge
1 c à café de concentré de tomates
jus d’1/2 citron jaune
zestes d’1/2 citron jaune
1 c à s d’Armagnac
sel , poivre , poudre de piment d’Espelette
30 g de beurre
1/2 verre d’ eau

Préparation du jus réduit

dans une poêle , déposer les carapaces et têtes de gambas que vous avez réservées
y ajouter l’échalote et l’ail hachés
flamber le tout avec 1 cuillère à soupe d’Armagnac
ajouter: la crème , le1/2 verre d’eau , le fumet de poisson , la pâte de curry rouge , le concentré de tomates , les zestes et le jus de citron.
saler (avec modération car les gambas , la pâte de curry sont déjà salés) , poivrer , et une pincée de poudre de piment d’Espelette.



laisser mijoter 20 mn à feu doux.
Ensuite mixer le tout et passer au chinois (passoire fine)
remettre sur le feu et ajouter 30 g de beurre.
réserver

3 ) Les fleurs de courgettes farcies

farcir délicatement les fleurs de courgettes avec la poche à douille.
puis , les rouler dans du papier film spécial cuisson






cuire à la vapeur pendant 9 mn à 85° (j’utilise un panier en bambou chinois mais on peut utiliser d’autres méthodes)
laisser reposer

4 ) dressage

dans une assiette creuse , disposer une fleur de courgette farcie au centre et l’entourer avec le jus réduit
déposer quelques fleurs comestibles sur le dessus

Stuffed Zucchini Flowers with Crab and Prawns , Reduced Prawn Shell Jus

Summer is slowly drawing to a close, but our vegetable garden is still giving us some of the sun-kissed produce of the season, particularly zucchini.

Today, it is the zucchini flower that has caught my attention. Its beautiful, vibrant yellow colour will brighten the plate.

I will stuff the flowers with a delicate mixture of crab and prawns, steam them gently to preserve their fine texture, and serve them surrounded by a rich jus reduced from the prawn heads and shells.

A beautiful, summery starter, ideally paired with a white or rosé wine recommended by Jenny, our sommelier and wine merchant (contact details at the end of the recipe).


1. Ingredients for the Stuffed Zucchini Flowers

Serves 4

  • 4 beautiful zucchini flowers
  • 100 g fresh or frozen crab meat
  • 320 g raw prawns, shells on — approximately 160 g once peeled
  • Juice of ½ lemon
  • Juice of ½ lime
  • A pinch of grated makrut lime (combava) zest
    Be careful with the quantity, as its flavour is very powerful.
  • 10 g fresh ginger, finely grated
  • 1 shallot
  • 1 garlic clove
  • 20 g good-quality thick crème fraîche
  • Olive oil, as needed
  • Salt and freshly ground black pepper
  • Espelette pepper
  • Edible flowers, for garnish

Preparing the filling

Place the 100 g of crab meat in a bowl and finely chop it.
If using frozen crab, make sure to drain and squeeze it thoroughly to remove any excess moisture.

Add the juice of the lemon and lime, the grated makrut lime zest and the 10 g of grated ginger, followed by the crème fraîche and a little olive oil.

Peel the prawns, reserving the heads and shells for the jus.

Heat a little olive oil in a frying pan. Add the prawns together with the finely chopped garlic and shallot.

Cook briefly — just enough to colour and cook the prawns without drying them out.

Finely chop the prawns with a knife, then add them to the bowl containing the crab.

Season with salt, freshly ground black pepper and a little Espelette pepper. Mix gently until all the ingredients are evenly combined.

Transfer the filling to a piping bag.


2. Ingredients for the Reduced Prawn Shell Jus

  • The reserved prawn heads and shells
  • 250 g liquid cream, 30% fat
  • 1 shallot
  • 3 garlic cloves
  • 1 teaspoon fish stock powder
  • ½ teaspoon red curry paste
  • 1 teaspoon tomato paste
  • Juice of ½ lemon
  • Zest of 1 lemon
  • 1 tablespoon Armagnac
  • Salt and freshly ground black pepper
  • Espelette pepper
  • 30 g butter
  • ½ glass of water

Preparing the reduced jus

Place the reserved prawn heads and shells in a frying pan.

Add the finely chopped shallot and garlic.

Pour in 1 tablespoon of Armagnac and carefully flambé.

Add the cream, ½ glass of water, fish stock powder, red curry paste, tomato paste, lemon zest and lemon juice.

Season with salt sparingly, as the prawns and curry paste may already contain salt. Add freshly ground black pepper and a pinch of Espelette pepper.

Simmer gently over low heat for 20 minutes.

Blend the sauce until smooth, then pass it through a fine-mesh sieve to obtain a perfectly smooth jus.

Return the jus to the heat and whisk in the 30 g of butter.

Set aside.


3. Stuffing and Steaming the Zucchini Flowers

Carefully fill the zucchini flowers using the piping bag.

Gently roll each stuffed flower in heat-resistant cooking cling film.

Steam for 9 minutes at 85°C / 185°F.

I use a traditional Chinese bamboo steamer, but other steaming methods can of course be used.

Allow the flowers to rest briefly before plating.


4. Plating

In a shallow bowl or deep plate, place one stuffed zucchini flower in the centre.

Pour the reduced prawn jus around the flower, creating a delicate pool of sauce without covering the flower itself.

Finish with a few edible flowers arranged delicately on top.

Serve immediately.
