Delicately Almond- or Hazelnut-Flavoured Biscuits

We all enjoy having a little biscuit with our coffee, tea or herbal tea – something that gently melts in the mouth.

Here is a particularly easy recipe for delicious little biscuits that can be stored in an airtight tin or jar and shared with your guests (or simply enjoyed all by yourself, of course!).

Ingredients (makes approximately 20 biscuits)

  • 130 g ground almonds (or ground hazelnuts)
  • 170 g rice flour
  • 90 g caster sugar
  • 100 g softened butter
  • 1 egg
  • Flaked almonds
  • Grated zest of 1 lemon
  • ½ sachet of baking powder
  • 1 vanilla pod
  • A pinch of salt
  • Icing sugar, for dusting

Preparation

Cream the caster sugar and softened butter together. Add the egg, the seeds from the vanilla pod and the lemon zest.

Incorporate the ground almonds (or ground hazelnuts), rice flour, baking powder and a pinch of salt.

Mix thoroughly until you obtain a smooth, even dough.

Roll out the dough on a chopping board. Using a cookie cutter, cut out the biscuits and decorate the top of each one with a few flaked almonds.

Place the biscuits on a baking tray lined with baking parchment.

Bake in a preheated oven at 170°C (340°F) for 13 minutes.

Once out of the oven, dust with icing sugar and enjoy!

A little tip

Store the biscuits in an airtight tin or glass jar to keep them fresh and crisp
